Chandon's vineyards are something quite unique, an exhaustive resource for the creation of Australia's finest table wines. Pinot Noir has taken very well to Yarra Valley, where the temperate climes and auspicious soils, form mesoclimes not dissimilar from the varietal's origins in the old world. Fruit is harvested throughout the chill of early morning, bunches are gently crushed into fermenters and treated to a cold soak, essential for extracting just the right amount of colour and tannin from skins while retaining delicate fruit character.
