Crafted from the pick of crop, grown to the finest Margaret River vineyards, Capel Vale displays strong regionality while articulating its pure varietal nature. Climatically unique for such fortuitous maritime climes, the growing seasons encourage Chardonnay grapes to ripen slowly and completely, translating into wines of elegance, tightness and finesse. A combination of new and old world vinification techniques, malolactic ferments and lees stirring, achieves a textural, creamy Burgundy style of West Australian Chardonnay.
The Capel Vale team subscribe to a philosophy that working hand in hand with nature is the best way to produce fine wine. The family owned operation manages mature established vinyards around the premier viticultural precincts of Western Australia, striving to produce wines which reflect the distinct climate and soils. Capel Vale hold a long term commitment to interacting with the environment for the production of the highest quality fruit. Harvested to a schedule determined by the development of vibrant varietal characters, Chardonnay is treated to a course of rich barrel ferments, malolactic and a spell of battonage on sedimentery lees, followed by a spell of maturation in a selection of fine oak barriques.
TASTING NOTES
Pale yellow hue. Aromas of citrus and grapefruit are complimented by French vanilla oak and rich lees characters. The aromas follow through to a long and complex palate, textural with creamy mouthfeel and exhibiting fine length. An elegant wine which drinks beautifully alongside crispy chicken recipes, delicate white meats or washed rind cheese.
 Capel Vale
Capel Vale began as a hobby for Sydney radiologist Dr Peter Pratten and his wife Elizabeth when they purchased land on the Capel River between Bunbury and Busselton in 1974
Capel Vale Winery, restaurant and cellar door, now sit atop the original vineyard site, Stirling Estate. Stirling Estate was originally the site of a stone fruit orchard in the 1930s. Consisting of rich, red alluvial loams over a limestone base, it possessed a natural, permanent watertable and was perfect for growing vines. The first plantings were in 1974, producing the first commercial vintage in 1980. After determining that the soils of the Capel area (now included in the EU registered Geographe Region) were best suited to Chardonnay and Merlot, it became the Prattens passion to determine the best region in South Western Australia for each of the main premium grape varieties.
